Pancakes and Toppings

Breakfast is my favorite meal of the day! If I ever miss breakfast, you can be sure that it was not an idea of mine…and if I haven’t eaten my breakfast within an hour of waking, I’m probably sick.
: )

I make pancakes a lot and try my very best to add some nutrition to them.

Topping #1 – Fruit

I really like to heat up frozen blueberries for a yummy topping. Sliced bananas and strawberries is my second favorite.

Topping #2 – Chia gel syrup
I’ve been adding Chia gel to our syrup. We use maple syrup (which is getting so expensive) so adding the chia gel helps cut cost and even better….it adds nutrition and good texture.
Chia gel (1 3/4 tbs chia seeds to 1 c. cold water….wisk and let sit for 10 – 20 minutes)
Toppings #3 – Yogurt (my favorite is Stoneyfield Organic Lowfat (or whole) Vanilla)
I love to add a spoon full of yogurt to my pancakes too but alas, I had no yogurt this morning.
Equal parts yogurt/chia seeds/maple syrup tastes amazing on pancakes!
….after posting this, we may have to have pancakes for dinner too haha.

    Wow, this sounds delish! I love pancakes too, and waffles, and so do both my kids. Never thought of using the chia seed that way, will have to try that! One idea I do is chop up bananas, put them in a fry pan with maple syrup and butter, and cook just until hot, pour over the pancakes. Any amounts work, just depends how you like it.

    We had pancakes tonight! 😀 Found them on pinterest (of course) and tweaked them. I ended up making two batches because it didn’t make very many. 1 banana in the food processor, 2 eggs whisked in…added some vanilla and cinnamon, and threw some oatmeal in the coffee grinder before I stirred it in the whole mix. Delicious.

    Oh! yum Tara that sounds absolutely delicious…..I am a pancake fan but I shouldn’t be…..due to my stupid confused thyroids I have to constantly watch my weight tch! However I can say I am a yogurt + fruit + honey breakfast fan too and in fact have that everyday, sometimes I mix it with some cereal….just for a change. Like yourself breakfast is a must for me and I take the expression “breakfast is the most important meal of the day” to heart. I have to have breakfast and my cuppa tea to start the day right …come rain come shine.

    YES. Yogourt. I love “Mediterranean” yogurt that is too sugary to be truly Greek, but great nonetheless! I haven’t tasted maple syrup since probably February! I also like berry jam, especially cranberry stuff. Have you ever been to the Cranberry Festival?
